Ingredients:
- 1/2 finely chopped small sweet onion
- 1 fresh hot spicy green chile, stemmed, seeded and very finely chopped
- 1 medium-large tomato, stemmed, seeded and very finely chopped
- 1 finely chopped clove of garlic
- 10 fresh chopped cilantro sprigs
- 3 ripe, peeled and pitted avocados
- 1/2 teaspoon salt
- Juice from 1/2 of a lime
Instructions:
To make this appetizer mix the onion, chiles, tomato, garlic, and cilantro in a medium-sized bowl. Mash the peeled and pitted avocados with lime juice and salt until you get a lumpy consistency. Add the previous vegetable mix to create a chunky consistency.
Immediately cover the guacamole appetizer with saran wrap, pushing the wrap on to entire surface of the guacamole to prevent browning. Place in the refrigerator for 1 to 2 hours in order to let flavors blend.
Place in an appetizer bowl and garnish with your choice of chopped onion, cilantro, and Mexican farmer's cheese. Use the appetizer as a dip with tortilla chips or as a condiment with other Mexican dishes.
