Ingredients:
- 25 Don Miguel/El Charrito Beef or Chicken Mini Tacos
- 1/2 can of refried beans
- 4 whole eggs
- 2 cans of el Pato Sauce
- 1 ½ cup of shredded Monterey jack cheese
Instructions:
Pre heat oven to 425F. In an 8 x 8 baking dish layer the bottom with refried beans. Place Don Miguel/El Charrito Mini Tacos on top of beans. Beat eggs and pour on top of mini tacos. Cook for 30 minutes to ensure that eggs are done. Add sauce and sprinkle with shredded cheese and put back in to oven for 8 minutes. Remove from oven wait 2-3 minutes before serving. Serve with a side of sour cream.Serves: 8
