Frozen Burrito Casserole

I always have a freezer full of Don Miguel frozen burritos, so I decided to try something different with them and it came out excellent. It is a very quick, easy and tasty dinner.

Ingredients:

  • 6 Don Miguel Grandito bean and cheese burritos
  • 10.5 ounce can of condensed cream of mushroom soup
  • 1/2 cup sour cream
  • 4 ounce can of diced green chile peppers, drained
  • 1 cup shredded Mexican cheese
  • 1 prepped avocado (optional)
  • 1 medium sized tomato, chopped (optional)
  • 1/2 cup salsa (optional)
  • 2.25 ounce can of sliced black olives, drained (optional)

Instructions:

Place the frozen burritos in a greased 9in. x 13in. baking dish. Stir the cream of mushroom soup, chile peppers and sour cream together in a bowl. Distribute the sauce evenly over the burritos. Sprinkle with shredded Mexican cheese.

Bake for 25 to 30 minutes in an oven at 375 degrees F. When the cheese is slightly browned and frozen burritos are completely heated. Serve with fresh avocado, tomato, salsa and olives.
