Microwavable Burrito Enchiladas

This recipe is a great way to dress up Don Miguel microwavable burritos. You can use any of the microwavable burritos, but I prefer the Grandito bean and cheese burrito.

Ingredients:

  • 6 Don Miguel Grandito bean and cheese burritos
  • 3 tablespoons flour
  • 1-3/4 cups water
  • 2 tablespoons butter
  • 1-1/2 teaspoons chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1 can (8 ounces) tomato sauce
  • 2 cups (8 ounces) shredded Mexican cheese blend
  • 1/3 cup chopped green onions
  • 1 can sliced ripe black olives (optional)

Instructions:

Put 6 frozen Don Miguel Grandito bean and cheese burritos in a greased baking dish. Melt the butter in a saucepan. Stir flour into melted butter until smooth; slowly stir in water. Next bring the sauce to a boil. Boil and stir for 2 minutes/until thickened. Add in the tomato sauce, chili powder, cumin and salt to the sauce. Simmer, uncovered, for 5 more minutes or until thickened.

Pour sauce over the 6 frozen Don Miguel Grandito bean and cheese burritos. Sprinkle with olives cheese, and onions to your preference. Bake, uncovered, at 350° for approx. 35 to 40 minutes, or until the microwavable burritos are fully cooked.

Serves: 6
