- 1/4 Cup Vegetable Oil
- 2 Tablespoons Self-Rising Flour
- 1/4 Cup Chili Powder
- 1 1/2 Cups Water
- 1/4 Teaspoon Ground Cumin
- 1/4 Teaspoon Garlic Powder
- 1/4 Teaspoon Onion Salt
- 2-6 THE BOMB® Spicy Red Hot Beef & Bean Burrito
- 1/2 Avocado
- 1 Lime Cut into wedges
- 1/2 Jalapeno Chopped
- Enchilada Sauce:
Heat oil in a skillet over medium-high heat. Mix in chilli powder and flour, lower heat to medium. Cook until lightly brown stirring consistently throughout to prevent burning flour.
Slowly stir in tomato sauce, water, cumin, garlic powder, and onion salt into the flour and chili powder until smooth, and keep cooking over medium heat for 8-12 minutes, or until thickened slightly. Season to taste with salt.
- Burritos and Toppings:
Preheat the oven to 450°F. Microwave your Bomb burritos according to the package instructions, removing them 30 seconds before they're finished. While the burritos are cooking, slice half of an avocado, cut a lime into wedges, and chop up some cilantro and half a jalapeño.
Transfer the burritos to a foil-lined baking dish, cover with freshly cooked enchilada sauce and slide into the oven for a few minutes until the sauce is warm. Remove from the oven and top with jalapeño, cilantro, and avocado slices. Serve with lime wedges.
